1. I can understand, that might be what she felt at that moment

2. I feel like he stabbed her not to kill, but to stop her.
Right before that, Hyunjoo had died while trying to protect her, Junhee, and Junhee's baby, so she must have desperately wanted to stop her son's choice, feeling both heartbroken and rushed. She probably thought, "After everything we've done to save them..."
But when that ended up leading to her son's death, the grandmother finally realized what she had done and made a difficult decision herself.
